With the resources in place, coupled with knowledgeable, HACCP trained personnel and a Firm Commitment From Senior Management, OceansFleet is ahead of the curve when it comes to providing our customers with Quality Seafood.

Every lot of our scallops is subjected to a battery of tests and examinations designed to ensure maximum customer satisfaction. In addition to the standard organoleptic testing common throughout the seafood industry, the Quality Control Department at OceansFleet Fisheries applies several additional tests that measure moisture content, evaluate both raw and cooked texture, measure uniformity of size and color and monitor for extraneous materials often associated with fresh scallops.

THE COLOR OF SCALLOPS

While It’s fair to say scallops are generally a light tan in color, the fact of the matter is that it’s not that cut and dry. Color of Scallops varies depending on area harvested, season, spawning considerations and other environmental factors. In an attempt to limit subjectivity on color description, we utilize the PANTONE COLOR MATCH SYSTEM when inspecting the color of scallops. Typical scallop colors range from white to tan or beige, a slight grey-green, faded pink or even orange during the spawn season. This may seem trivial, but with some of the country’s top chefs using our Atlantic Sea Scallops in their dishes, we consider Plate Presentation an important factor in grading our scallops. The same discerning eye employed by the country’s best culinary minds is used here at the Primary Processing level. It is this attention to “detail of quality” that assures our customers they’re receiving only the best scallops on the market.

U.S.D.C. GRADE “A” SCALLOP PROGRAM
